To achieve its exquisite taste (which is far different than the bland black olives of California) these olives are placed in a brine solution in subterranean containers. This process neutralizes the acidity of the olives and deepens their natural flavor. This truly unique pâté is 100% natural with no artificial additives or colorants to compete with its subtle natural flavor. Ellen Russell, one of our LaTienda community members, sent in the following recipe, a recipe that is a favorite with her friends: Black Olive Dip- 1 c sour cream, 1/2 c real mayonnaise (not Miracle Whip ), 2 T black olive paste. Mix together until smooth. Refrigerate about an hour, if you can wait, then serve with crackers, chips, celery, or my preferred choice, fresh, soft pita.
